Amino acids are produced in two main ways: in living organisms and industrially. In humans and plants, amino acids are synthesized through biochemical reactions. Cells use carbon skeletons derived from carbohydrates and fats and add an amino group (–NH₂) to them. This is accomplished by specialized enzymes, and the nitrogen source is most often ammonia or other nitrogen-containing compounds. However, the body cannot synthesize essential amino acids; they must be obtained through diet. Industrially, amino acids are produced through chemical synthesis or microbiological fermentation. Most often, bacteria are used to produce the desired amino acid under controlled conditions, after which it is purified and dried.
